Popeye Would Love This Recipe for Spinach!


One of the marvelous food cultures featured in Culinary Clues Around the World, Recipes from the Sandra Troux Mysteries is the cuisine of South Korea. It is delicious, healthy and distinctive, infused with soy, garlic, ginger, and hot chili peppers to great effect – to produce salty, spicy or fiery-hot flavors. Most meals include a hot soup or stew, small side dishes, kimchi (fermented vegetables, mostly cabbage), and sticky (glutinous) rice. Korean barbecued meat, fish, fowl, and tofu are popular throughout the world. Here is a wonderful side dish to tickle your taste buds.

Sigumchi Namul

(Seasoned Spinach, Side Dish)

1 lb. fresh spinach

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sesame seeds

1 teaspoon sesame salt*

2 cloves garlic, finely chopped

2 teaspoons sugar

*Or, use 1-½ teaspoons table salt and add additional 2 teaspoons soy sauce

Clean and separate spinach leaves; blanch in boiling water 20-30 seconds. Remove and rinse in cold water; drain. Place on paper towels or in salad spinner to remove excess water. Mix remaining ingredients and toss with spinach.
